One of the best known, most versatile pasta sauces in Italian cuisine, fresh and delicate even in its colour scheme.
PREPARATION: pour the ragout into a non-stick frying-pan and heat for a couple of minutes, then add the pasta when cooked and stir briefly over heat.
PERFECT SERVE: ideal for stirring into linguine over heat or for making a risotto!
